I have a pair Thrustmaster Cougar MFDs that are gathering dust due to switching to VR. If I find the HMD flat panel in Odyssey is too unworkable, your build has inspired me to dust them off and jazz them up a bit
 
That's really nicely done.

If you're looking for an easy way to make something similar yourself, a zero delay usb board or 2 can be plugged in to your pc to do the tricky bit and it's simply a case of wiring up a few buttons then getting creative with a casing.

It's also possible to use a raspberry pi pico in a similar way so that it also controls the lighting and has the facilities for rotary encoders and possibly a screen output.
Pimoroni have quite a few fun bits and bobs to help with it.
